SHOULD WE (AND HOW DO WE) DO A CONVENTION OF STATES TO AMEND THE CONSTITUTION?

So if we feel our government is off track and Congress won't propose amendments to the Constitution, what are we to do? Article V says that states can call for a convention to propose amendments, and when done, Congress has to grant it. But how would it work? How do we know it won't get out of control? Couldn't they just throw the current Constitution away and start over?
